Chicken Tinga

Ingredients:

4 chicken breasts (Shredded/pulled)
3 onions sliced
2 garlic cloves sliced
4 tomatoes
2 bay leaves
1 can of Chipotle Chiles in adobo sauce
1/2 teaspoon dried marjoram
1 teaspoon dried thyme
½ a can of chicken broth


Instructions:

1. Slice the onions/ Garlic.
2. Shred/ Pull the chicken by hand.
3. Sauté the onions and garlic.
4. Puree 1/3 of the onions and garlic, the tomatoes, chilies, chicken broth. CAUTION: before adding all of the chilies try half of the can and check for spice/hotness levels... Every can of chilies are different.
5. Mix the sauce with the rest of the onions/garlic, and chicken.
6. Add spices, and let simmer for a few minutes.

Serve over Tostadas (Also good served over rice.)
Garnish with: Sour Cream, Shredded Lettuce, Avocado, and/or Limes.
