New York Style Cheesecake

Ingredients:

1 lb. ricotta cheese
1 lb. cream cheese, softened
1 pint sour cream
4 eggs
1/2 lb butter, melted
2 tsp vanilla
3 T lemon juice (approx. the juice of one lemon)
1 and 1/2 cups sugar
3 T corn starch
3 T flour


Preheat oven to 325 degrees

  1. In a large bowl, combine the ricotta, cheese, cream cheeses and sour cream; blend until smooth and completely mixed
  2. Add the eggs one at a time, mixing for 2 minutes after adding each egg
  3. Add melted butter, vanilla and lemon juice to cheese and egg mixture and mix thoroughly
  4. Mix sugar, flour, and cornstarch together; add little by little to cheese mixture and blend thoroughly
  5. Pour into a 10" ungreased springform pan and place on middle oven rack
  6. Bake at 325 degrees for 15 minutes then raise heat to 375 degrees and bake for an additional 40 minutes
  7. Turn off oven and keep cheesecake in oven for an additional 2 hours
  8. Remove and refrigerate overnight or for at least 12 hours
