Yassa

Ingredients:
(Recipe serves 4-6 people)

8-10 Chicken drumsticks
Onions, thinly sliced – 6
Lemons, juice only -- 3
Black pepper (4 table spoons) to season
4 carrots, cut in small pieces
vegetable oil


Instructions:

  1. Add all the ingredients except for the oil to a large non-reactive bowl and mix together. Refrigerate and marinate for at least 4 hours
  2. Remove the chicken pieces; fry them in vegetable oil until almost well browned.
  3. Put the marinade in the pan with the chicken (while in the oil), reduce heat to medium-low heat until cooked or tender, about 30-40 minutes.
  4. Adjust seasoning and serve with rice.
