Hatchapuri

(Armenian dish, contributed by Anna-Mariya Kukuyan)

Approximate Prep and Baking time: 40 -50 minutes

Ingredients

  • Puff pastry sheets
  • Mozzarella and feta cheese (1 pack of each should be more than enough, but you can always save it for the next time)
  • 1 egg
  • A little bit of flour

Cooking:

  1. If you cook right after you bought the ingredients, leave Puff pastry sheets in the room, so it will defrost - > usable.
  2. When Puff pastry sheets are soft, take them out of the box (there are 2 separated sheets in the package). Use a little flour, just so that the dough wouldn’t stick to your work area or your hands. Cut (horizontally) the sheet into 3 equal pieces and each piece into 3 squares (if you want to make 18 pieces) or into 4 smaller rectangulars (for 24 pieces). 
  3. In a small bowl put some Mozzarella (approximately 3 table spoons) + a bit of Feta (approximately 1 table spoon) + egg white (NOTE: save the yolk in a different cup/bowl.  You will need it shortly).  Mix the cheeses and egg white well. (this is the mix)
  4. Put approximately a teaspoon of the mix into each square or rectangular piece of pastry.
  5. Fold it diagonal/half way (NOTE: fold well because during baking the dough can unfold and cheese might fall out).
  6. Pre-heat your oven to 360°
  7. Put the triangles/rectangulars on a baking sheet.
  8. Spread the yolk over the triangles/rectangulars
  9. Bake for about 20 minutes
  10. Should be “golden” when done.

Best when served warm.

NOTE: Instead of cheese you can try other variations, such as cheese + spinach (Greek dish) or just your favorite kind of jam to make the sweet ones.
