Fattoosh

Approx. 5 bunches parsley
4 lg. Tomatos
4 Green onions
3 cucumbers
handfull mint leaves
6 pita bread
Olive oil to taste

Put pita bread into oven until crunchy. Once bread is crunchy, break into small pieces. Add a good amount of olive oil to the bread and add seasoning – simmaa (Palestinian spice).

Cut all greens up into small pieces, and add any other greens that you like. Mix greens with pita bread, oil and seasoning, then serve.
