Ingredients:
2 tbsp sunflower oil
1 onion, finely chopped
2 cloves garlic, crushed
1 green pepper, chopped
1/2 cabbage, shredded
3 carrots, grated
(for lazy people or time saving people, just get a bag of coleslaw!)
1 tsp chilli powder (depending on taste)
3 tbsp hot curry powder (also depending on taste)
2 tomatoes, chopped
a bunch/handful (literally) of green beans, chopped
410 gram can baked beans in tomato sauce
salt to taste
Directions:
Heat the oil and fry the onion, garlic pepper, curry powder and chilli powder until soft. Add green beans and cook for about 5 minutes. Add cabbage, and carrots and cook until limp. Add remaining ingredients and simmer for about 10 minutes.
Can be served hot or cold.
NOTE: This recipe can be varied by adding other vegies like cauliflower or brocolli.
